Step 2: Rinse the slow cooker off thoroughly and give it a good spray with vegetable oil or a nonstick skillet. Set the slow cooker to a slow, easy, covered cook on low heat. Deglaze the pot 2 or 3 times with plenty of soy sauce, rice vinegar, sugar, or ketchup, to taste.

Step 3: Once the liquid in the slow cooker is reduced to a syrup like consistency, stir it smoothly into the chicken and vegetables. (If your slow cooker already has liquid, skip to step 6.) Cover the slow cooker tightly and let the pot cook on low for 8–10 hours, until the chicken is thoroughly cooked and the vegetables are very soft.
