Offal is the organ meat from the animal. These may come from chicken, lamb, pork or beef beasts.
The organs we benerally eat are Liver, Kidney, Heart, Tongue and Brain. Another offal delicacy are Sweetbreads (pancreas and thymus).
My prefernce is always lamb liver and lamb kidneys.

One of the important minerals we must feed to our mitochondria is sulphur. Sulphur plays a key role in liver metabolism and has an important role on joint cartilage and the keratin of the skin and hair.
Sulphur also plays a key role in the defence systems against ageing. Some of the healthiest communities have the highest sulphur in their diet.
The amino acids of sulphur are very important in the maintenance and integrity of the cellular systems. They ate involved in the manufacture of glutathione. They help to neutralise free radicals.

Wahls Paleo Plus is the ketogenic version of the Wahls Protocol. Petra has developed a tracking system to help her monitor her progress on this keto plan.
She claims to have reached ketosis after a couple of days on the plan. She is now experimenting with coconut oil quantities to measure how well she maintains the ketosis state.
